FIBROUS casings
Overview
FIBROUS casings are made from specially prepared paper impregnated with cellulose. They are permeable to smoke and water vapour and can be clipped. EP, SL and regular versions serve different peeling and adhesion needs.
Applications
- for mortadel meat preparations, ham, rolls, steamed sausages, smoked and dried and other ripening products.

Structure
- are found in many color versions. Most popular are Clear, Cassia, Visnat, Dark Snat, Mahogany
- Fibrous casings are also adequately impregnated: EP – easily removable e.g. for sliced products (can be perforated), SL – with increased adherence to the stuffing
- the casings are in roles and some crinkled require wetting
- calibers from 40 to 170 mm
Soaking
Time: 30-60 minutes
Water temperature: 30-40 oC
Storage
- Keep the casings dry, away from heat sources
- Storage temperature : 15-20 st C
- Relative humidity : 60-70%
